How do industry-led standards play a role in food safety? A new feature published by 3-A captures the legal perspectives of attorney Bill Marler, who shares his thoughts on standards and how hygienic equipment design serves as a powerful defense against foodborne illness and outbreaks.
A long-time foodborne illness attorney, Marler will provide the keynote "Legal Considerations in Hygienic Equipment Design" at the upcoming 3-A SSI 2025 Summit in May. He was the attorney for some of the most high-profile foodborne illness outbreaks in the U.S., including a fast-food E-coli outbreak in 1993 and a 2011 Listeria outbreak linked to cantaloupes, among other cases.
He underscores the importance of following the latest good practices in equipment design and cleaning protocols, and establishing the right food safety culture to achieving better health outcomes.
